Vegan Spring Rolls

Spring rolls are one of my favorite Asian foods to eat in the summer because of how refreshing they are, so I couldn’t resist doing this recipe.  More importantly, this a great chance to show anyone who has never heard of rice paper just how amazing and versatile this ingredient is. There are several ways you can use this, not including the way that I’ve used them.  You can find these in the Asian cuisine section of any large grocery store, and if not, then you can probably find them online.

For this recipe, I included ingredient amounts, but I encourage you to put your own flavorful flair to your spring rolls.  This specific combination that I used was just something stuck in my head for a while, and I needed to get it out. Also, if you’ve never worked with Thai basil, please do!  The taste is almost a combination of licorice and basil.

The dipping sauce is probably the most important part of the recipe, and you don’t have to use a peanut butter sauce.  Just make sure you make some kind of sauce with this. It will greatly enhance the flavors in your spring rolls. Anyways, I hope you enjoy this recipe as much as I did.
