This thai coconut french toast recipe is quite interesting. I’m not a huge fan of french toast, but any chance to put a thai spin on a dish should never be overlooked. Adding coconut milk to the batter was a game changer. The slight notes of sweetness and coconut flavors take this to another level. I used a lightly dried basil for the batter, but if you can’t find that in a store near you then dried or fresh basil should be fine. Some of you may wonder why I didn’t use Thai basil. I couldn’t find any, so I used regular basil instead.
It is crucial to use stale or very dry bread so that it can absorb the batter easily and hold its shape. If you don’t use stale bread then it could just fall apart once it absorbs enough batter. This is an easy recipe that the Thai and the French could be proud of, so I hope that you enjoy it as much as I did.

Ingredients
- 2 eggs
- 2 yolks
- 1 Tsp nutmeg
- 1/4 Tsp almond extract
- 1 Tsp fish sauce
- 2 Tbsp lemongrass paste
- 1 Tbsp sugar
- 1 finely diced jalapeno, seeds included
- 1 cup coconut milk
- zest of 1 lime
- 2 Tbsp lightly dried basil
- 6 slices of stale or dry bread cut into thick slices
- 4 Tbsp butter, or any other oil that you choose
- diced mango to garnish
- sliced almonds to garnish
- In a large mixing bowl whisk together all of the ingredients for the batter, cover it, and let it chill for at least half an hour.
- Once the batter has been chilled, soak half of your bread slices in the batter.
- While the bread is soaking, melt half of the butter in a pan over medium heat.
- When the butter is melted and foamy, transfer the bread to the pan and cook the first side for about 3 or 4 minutes. After that, careful flip each slice over. You can tell when a slice is done by if it springs back up when you give it a little poke.
- After your first batch you will probably need to add more butter or oil, so add the rest of it and repeat the cooking steps.
- Enjoy and top with the toppings of your choosing. I went with diced mangos, sliced almonds, and maple syrup.
